At the risk of over-stating the bleedingly obvious, change is afoot. Even those that considered the impact of a global pandemic are unlikely to have foreseen the broad shifts in consumer behaviour in the face of business shutdown and widespread fear and uncertainty. Before this edition is superseded we may see Australia move closer to containment and there will (hopefully) be a result in the American elections, potentially with great affect on cross-Pacific activity. But what we know for certain is that global case numbers will surely rise further, and that many COVID-inspired pivots are here to stay.

But as they say, a change is as good as a holiday, and being in the business of making merry, pubs can embrace the winds or risk watching industry and consumers pass them by.

This month we spoke with well-known formerly Sydney-based hotelier Andrew Lazarus about the new offerings at his Exchange Hotel in Hamilton, which he is eager to introduce – live and loud – to today’s Novocastrian pub-goer. A multi-million-dollar renovation has produced a local that is fit for domestic gatherings through to international showcases.

Injecting one of the strengths of a pub into drinks consumed at home, the market for pre-batch and bottled cocktails has become an instant success in some of the most innovative venues.

And wrapping up our two-part look into the steadily looming crisis in hospitality staffing, we spoke with operators and businesses in employment and training about what it will take to attract and employ sufficient numbers of quality staff in the post-pandemic era.
